乳酸菌与羊毛硫细菌素

  乳酸菌发挥其益生功能的重要生理特性之一是其能产生具抑菌活性的细菌素类代谢产物。羊毛硫细菌素是(lantibiotics)是一类由革兰氏阳性菌(主要是乳酸菌等)的核糖体合成产生并经过翻译后修饰的抗菌多肽(19-38 aa),因含特殊羊毛硫氨酸(lanthionine)而被称为羊毛硫细菌素(lanthionine-containing antibiotics)。它们不仅赋予乳酸菌等产生菌在环境中的竞争优势,调节微生态平衡,也因其自身特点如抑菌活性强、抑菌谱较广,且可被消化道中的酶降解,不易引起抗药性,抗菌机制比较独特等,是人们用来改造成新抗菌药物的理想材料。羊毛硫细菌素的典型代表——乳酸乳球菌产生的乳链菌肽,就因其高效抑菌活性及安全性而被广泛应用作天然食品防腐剂。本报告主要围绕乳酸菌等产生的羊毛硫细菌素,介绍了以nisin及bovicin H J50等为代表的羊毛硫细菌素的生物合成、代谢调控、结构功能关系、抑菌作用机制、资源挖掘及应用开发等,为最终人们更好地利用这类生物活性物质为人类健康服务奠定理论基础。
