Despite high standards of food safety in Japan,consumers show worry from various reasons,and it appears there are conflicts between safety and reassurance in food.Demonstrating that different principles exist between safety and reassurance,the author describes important factors which determine safety and reassurance on food.Claims for reassurance on food originated firstly from easy words of politicians/government in the case of accidents or serious failure in their conducts in food safety,secondly from current Japanese food supply which depends highly upon import and high use of processed foods,thirdly from recent cases of fraud in labeling related to above situations,fourthly from mal-education on food safety amplified by misleading reports announced by some media.
