Effects of temperature and pH on the digestive enzyme activity in stomach, hepatopancreas and intestine of orange-spotted grouper, Epinphelus coioides were determined in the present study.The results showed that the order of protease activity in different digestive organs was hepatopancreas> stomach> intestine, and the order of amylase activity in different digestive organs was hepatopancreas> stomach> intestine.The optimum temperature for protease activity in stomach, hepatopancreas and intestine was 40 ℃ respectively.The optimum temperature for amylase in stomach, hepatopancreas and intestine were 45 ℃, respectively.The optimum pH value of protease for stomach, hepatopancreas and intestine were 4.5, 7.5 and 7.5, respectively.The optimum pH value of amylase for stomach, hepatopancreas and intestine were 3.0, 8.0 and 7.5, respectively.
