目的了解铁路伙食团就餐场所卫生设施及微小气候的基本情况,为铁路伙食团卫生安全管理提供依据。方法利用对不同地区进行随机抽样调查的方法 ,按照《餐饮服务食品安全操作规范》对伙食团就餐场所卫生设施要求进行逐项确认,依据《饭馆(餐厅)卫生标准》(GB16153-1996)对伙食团就餐场所微小气候进行评定。结果卫生设施总体合格率为58%,其中,防鼠、防蝇设施合格率为88%,其中洗手设施合格率为32%,洗碗设施合格率为24%。微小气候总体合格率为77%,其中,采光、照明、一氧化碳合格率达到或超过80%;而二氧化碳、噪声和甲醛的合格率不足80%。结论不同地区就餐场所卫生设施建设存在差距,卫生清洗设施还有待提高,外环境、个人习惯及装修情况共同影响微小气候的合格率。
Objective To understand the basic situation of sanitary facilities and microclimate in dining establishments of railway mess groups and provide the basis for the health and safety management of railway mess groups. Methods The method of random sampling in different regions was used to confirm the requirements of sanitation facilities in the dining establishment according to the Code of Practice for Food Service of Food Service. According to the hygiene standard of restaurant (restaurant) (GB16153-1996) Regiment dining venue micro-climate assessment. Results The overall pass rate of sanitation facilities was 58%. Among them, the pass rate of anti-rodent and anti-fly facilities was 88%, of which the passing rate of hand-washing facilities was 32% and the passing rate of dishwashing facilities was 24%. The overall passing rate of microclimate was 77%, of which, lighting, lighting, carbon monoxide pass rate reached or exceeded 80%; and carbon dioxide, noise and formaldehyde pass rate of less than 80%. Conclusions There is a gap in sanitary facilities construction in dining establishments in different regions. The sanitary washing facilities need to be improved. External environment, personal habits and decoration conditions affect the passing rate of microclimate.
