面点,素以历史悠久、制作精致、品类丰富、风味多样而著称于世。面对制作工艺复杂的油酥面,教师应该如何让学生能在轻松愉快的教学环境中将它牢牢掌握,这是值得中等职业学校面点教师考虑的问题。笔者结合学校几位面点教师的执教经验,从技能实践与理论基础结合、信息化技术在油酥实践制作的应用、合作学习对油酥制品创新教学的作用等几方面对油酥制作工艺的教与学进行探析。
