为了分析陕北红枣中三萜类物质的含量及抗氧化活性,本试验选取狗头枣和木枣为研究对象。以95%乙醇为提取溶剂,采用索氏提取法分别提取枣皮和果肉中的三萜类物质,体外试验法评价红枣中各类三萜提取液对DPPH·和双氧水的清除能力。研究表明,不同品种间总三萜含量差异较大,其中狗头枣枣皮三萜类物质的含量最高,为0.148 mg/g,木枣果肉总三萜含量最低,为0.136 mg/g。参试红枣品种中提取的三萜类物质在不同的抗氧化体系中都表现出较好的抗氧化活性,红枣三萜类物质含量与各抗氧化指标均呈显著正相关,为陕北红枣的开发利用提供了理论依据。
In order to analyze the content of triterpenoids and the anti-oxidative activity in the red dates of northern Shaanxi, we selected the Chinese date and the dates for the study. Triterpenes extracted from varieties of Chinese jujube showed better antioxidant activity in different antioxidant systems.
