采用纸层析法制取山葡萄色素中各纯组分。以浓盐酸:甲酸:水:24.9:23.7:51.4(V/V)为展开剂。分离出两个独立的非常明显的色谱带。根据0.1%盐酸甲醇液中显色,紫外-可见吸收光谱测定,与Alcl3反应,糖组分鉴定,色素的部分及完全水解,A44/A-max比值等综合研究结果推断,山葡萄色素两组分分别为芍药色素-3-葡萄糖苷(Pn-3-glu)和矢车菊素-3-葡萄糖苷(Cy-3-glu)。
