在正常的生命过程中,自由基为维持生命所必需。体内自由基不断产生,也不断地被清除,使之维持在一个正常的生理水平上。自由基在生物体内参与吞噬病原体、部分生化反应以及调节细胞增殖与分化等重要的生理过程。但过量的自由基会损伤DNA,改变蛋白质结构,使蛋白质失去生理功能和诱发疾病。机体内的自由基清除系统和自然界中的抗氧化剂在保护机体免受氧化损害中起重要作用。儿茶素类化合物广泛存在于茶叶等植物中,是活性显著的抗氧化剂。近年来,关于儿茶素类化合物抗氧化能力评价和机制的研究很多,但不同的评价方法,由于其原理和方法的不同,得到的结果不尽相同。为此,综述儿茶素类化合物抗氧化评价方法和酚类化合物抗氧化机制的研究现状,旨在为儿茶素的应用提供有益的参考。
In normal life, free radicals are necessary to sustain life. The body constantly produce free radicals, but also continue to be removed, so maintain at a normal physiological level. Free radicals in the body involved in phagocytosis of pathogens, some biochemical reactions and regulation of cell proliferation and differentiation and other important physiological processes. However, excess free radicals can damage DNA, alter the structure of proteins, lose their physiological functions and induce diseases. Free radical scavenging systems in the body and antioxidants in nature play an important role in protecting the body from oxidative damage. Catechins widely present in plants such as tea are active antioxidants. In recent years, many studies have been conducted on the evaluation and mechanism of antioxidant capacity of catechins, but different evaluation methods have different results due to different principles and methods. Therefore, the current status of antioxidation evaluation of catechins and antioxidative mechanism of phenolic compounds are reviewed. The aim is to provide a useful reference for the application of catechins.
