季鸿崑先生是国际食学界知名学者,他以精到的化学科学与科技史学养、深厚的中华文史典献功夫,专注当代中国烹饪高等教育与食学研究三十年,奠定了学科理论、规范了教育体例、推进了食学进步,影响巨大而深远,海内外食学界对其道德文章均由衷的敬重。他去世所造成的研究空缺是相当长期内难以填补的。作为与季老最知近的同道,笔者心痛神忧,唯有勉力余年以追悼告慰。
