以中药材当归的提取剩余物为研究对象,运用酶-化学结合法制备膳食纤维,并采用单因素实验法与正交实验法结合以选取最优提取工艺:碱处理质量分数为2%、碱处理时间为0.5h、碱处理温度为30℃、粒度为80目,在此条件下得到当归膳食纤维的得率为71%,持水力为2.1g.g-1,其综合得分为0.988。
The extraction residue from Chinese angelica Angelica sinensis was taken as research object. The dietary fiber was prepared by enzymatic-chemical combination method. The optimal extraction process was selected by single factor experiment and orthogonal experiment. The treatment time was 0.5h, the temperature of alkali treatment was 30 ℃, the particle size was 80 mesh. The yield of Angelica sinensis fiber was 71%, and the water holding capacity was 2.1gg-1. The comprehensive score was 0.988.
