目的了解街头小吃食品卫生现状,加强街头小吃食品卫生管理。方法对10个集贸市场及6条主要街道的街头食品的基本情况进行了调查分析。结果街头小吃摊点的基本卫生、环境卫生、个人卫生条件、管理情况和食品卫生状况都不容乐观,随机抽取了450份小吃摊点销售的食品送实验室检测,细菌总数超标的87份,占19.3%;大肠菌群超标的58份,占12.9%;致病菌污染超标的50份,占1.1%。143家摊点未进行餐饮具消毒,占65%。结论要实施综合治理,严把“发证”关,加强食品安全知识宣传,加大对街头小吃的食品卫生监督力度。
Objective To understand the status quo of food hygiene on street snacks and to strengthen food hygiene management on street snacks. Methods The basic situation of street food in 10 bazaars and 6 main streets was investigated. Results Street food stalls basic hygiene, environmental hygiene, personal hygiene conditions, management and food hygiene are not optimistic, randomly selected 450 snack stalls to sell food sent to the laboratory test, the total number of bacteria exceeded 87, accounting for 19.3% ; 58 coliform bacteria exceeded the standard, accounting for 12.9%; 50 bacteria exceeded the standard, accounting for 1.1%. 143 stalls were not disinfected tableware, accounting for 65%. Conclusion It is necessary to implement comprehensive management and strictly control the issuance of certificates so as to strengthen the propaganda of food safety knowledge and intensify the supervision of food hygiene on street snacks.
