目的对重庆市不同地区野生食用菌中总砷及砷形态进行分析,为其食用的安全性提供参考依据。方法总砷采用微波消解-电感耦合等离子质谱法(ICP/MS)测定;不同形态砷经1%硝酸浸提,离子色谱-电感耦合等离子质谱法(IC-ICP/MS)测定。结果所测野生食用菌中总砷含量为34.6μg/kg~3.89×104μg/kg(以干重计),无机砷含量为38.1μg/kg~1.18×104μg/kg(以干重计),无机砷为总砷的(35.5%±27.7%),总砷含量高于500μg/kg的3种野生食用菌中砷以有机砷形式为主,而在测定的4种有机砷中松茸和松树菌中砷甜菜碱(As B)占总砷的50%以上,牛肝菌中二甲基砷(DMA)占总砷的(39.3%±25.3%)。结论野生食用菌中总砷、无机砷的含量随地域变化而改变。已研究的3种野生食用菌中无机砷、有机砷形态的分布亦随种类而不同,砷在野生食用菌中总体上以有机砷的形式存在,而在有机砷中以砷甜菜碱(As B)存在为主。
Objective To analyze the forms of total arsenic and arsenic in wild edible fungi in different areas of Chongqing and provide references for the safety of their consumption. Methods Total arsenic was determined by microwave digestion-inductively coupled plasma mass spectrometry (ICP / MS). Different forms of arsenic were determined by 1% nitric acid extraction and ion chromatography-inductively coupled plasma mass spectrometry (IC-ICP / MS). Results The content of total arsenic in the wild edible fungi was 34.6μg / kg ~ 3.89 × 104μg / kg (dry weight basis), the content of inorganic arsenic was 38.1μg / kg ~ 1.18 × 104μg / kg Among three kinds of wild edible mushrooms with arsenic total arsenic (35.5% ± 27.7%) and total arsenic content higher than 500μg / kg, arsenic was mainly in the form of organic arsenic. Among the four kinds of organic arsenic tested, Matsutake mushroom As B accounted for more than 50% of total arsenic, and borate accounted for 39.3% ± 25.3% of total arsenic. Conclusion The content of total arsenic and inorganic arsenic in wild edible fungi changed with the change of geographical area. The distributions of inorganic arsenic and organic arsenic species in the three kinds of wild edible fungi studied also vary with the species. Arsenic exists in the form of organic arsenic in the wild edible fungi as a whole. However, in the organic arsenic, As B ) Presence exists.
