目的建立快速、准确测定酱油中铝、铬、锰、铁、镍、铜、锌、砷、硒、镉、锑、铅等12种元素的电感耦合等离子体-质谱(ICP-MS)检测技术。方法根据酱油高盐分性质,系统分析影响其测定的干扰因素,通过样品基体稀释、选取合适同位素、采用碰撞池He模式及内标校正等技术消除干扰,建立准确测定方法。结果 12种元素在0.2μg/L~1.0 mg/L范围内线性良好,相关系数均达0.999以上,方法检出限为0.001~0.003 mg/L,加标回收率为80%~110%,相对标准偏差<10%。结论此方法能有效消除干扰,准确、简便、快速,适用于酱油等高盐食品中多种元素的同时测定。
OBJECTIVE To establish a rapid and accurate ICP-MS detection technique for the determination of 12 elements in aluminum, chromium, manganese, iron, nickel, copper, zinc, arsenic, selenium, cadmium, antimony and lead in soy sauce. Methods According to the characteristics of high salinity of soy sauce, the influencing factors of its determination were systematically analyzed, and the appropriate isotopes were diluted by sample matrix and eliminated by interference cell He mode and internal standard calibration to establish the accurate determination method. Results The linearity of the 12 elements in the range of 0.2 μg / L to 1.0 mg / L was good with the correlation coefficients above 0.999. The detection limits were 0.001-0.003 mg / L and the spiked recoveries were 80% -110% Standard deviation <10%. Conclusion This method can effectively eliminate interference, accurate, simple and rapid, suitable for simultaneous determination of a variety of elements in high salt foods such as soy sauce.
