炒是“雷公炮制十七法”之一,属火制法范围。据手头资料按使用习惯统计,需要炒后用于临床的常用中药将近500种。炒是中药炮制中广泛应用的方法,也是炮制的基本操作方法。火制法范围中的烫法、炙法的操作与炒法雷同,常有混同现象。如砂烫也叫砂炒;酒炙也称酒炒。“砂炒”、“酒炒”将不列入炒法,而在烫法、炙法中讨论。还有煨法、炮法、煅法中也有部分药物用炒法或者与炒法中某些步骤相同。
