深秋时节,正是人们品尝螃蟹的最好时光。但由于螃蟹生长在江河湖海里,又喜食小生物、水草及腐烂动物,蟹的体表、鳃部和胃肠道都沾满了细菌、病毒等致病微生物。据分析,在蟹体表面,100%染有嗜盐菌;蟹鳃和胃肠道中,分别沾有31.5%和21.2%的嗜盐菌;还有些螃蟹生活在被污染的水体中,常染有痢疾杆菌、伤寒杆菌和甲型肝炎病毒。如果吃蟹不注意卫生,就会使人致病甚至中毒。
