ASI是抑制小麦 α-淀粉酶活性及改善小麦品质的一种重要蛋白 ,目前已将编码 ASI蛋白的基因定位于麦类作物第二同源染色体的长臂上。 ASI蛋白具有高度的多态性。大麦中 ASI蛋白对小麦α-淀粉酶的活性抑制作用较强 ,在小麦中导入大麦 ASI蛋白基因能够延缓小麦穗发芽。抗 ASI蛋白的单克隆抗体具有特异性 ,依赖抗小麦 ASI蛋白的 ELISA是测定 ASI蛋白浓度的一种有效方法。本文对 α-淀粉酶抑制蛋白的特性及应用进行了综述和展望。
ASI is an important protein that inhibits the activity of wheat α-amylase and improves the quality of wheat. At present, the gene encoding ASI protein has been located on the long arm of the second homologous chromosome of wheat crop. ASI protein has a high degree of polymorphism. ASI protein in barley had a stronger inhibitory effect on wheat α-amylase activity. Introducing barley ASI protein gene in wheat could delay wheat sprout. Anti-ASI monoclonal antibody is specific, anti-ASI protein-based ELISA is an effective method for the determination of ASI protein concentration. In this paper, the characteristics and applications of α-amylase inhibitory protein were reviewed and prospected.
