目的了解本地域食品中食源性致病菌的污染种类、污染水平和污染程度,为地域性食源性疾病风险评估和风险预警,提供科学依据。方法 2010年-2012年随机采集烟台市8市(区),11大类1122份样本;参照GB 4789规定的相关方法,对食品中存在的特定致病菌进行检测。结果 11大类1122份食品样本中,6类致病菌阳性检出,120份样本存在食源性致病菌的侵染,总体污染率为10.70%,呈现“线性上升”的污染趋势。生食水产品中副溶血弧菌污染严重,污染率17.59%;肉及肉制品中单增李斯特菌污染严重,即食米面制品中腊样芽孢杆菌污染率偏高。结论烟台地域在售食品中食源性致病菌污染率相对较高,主要为水产品、肉及肉制品和米面制品中的致病菌污染。特别是生食水产品和即食米面制品中,副溶血弧菌和腊样芽孢杆菌侵染较为严重。建议强化食品生产、销售环节中食源性致病菌的防控措施,加强地域性食源性致病菌的监测,防止食源性疾病的发生。
Objective To understand the types of pollution, the level of pollution and the degree of contamination of food-borne pathogens in food in the local area and provide a scientific basis for risk assessment and risk warning of regional foodborne diseases. Methods From 2010 to 2012, 1122 samples from 8 cities (districts) and 11 categories of Yantai were collected randomly. The specific pathogenic bacteria in food were detected according to the relevant methods stipulated in GB 4789. Results Among the 1122 food samples of 11 categories, 6 kinds of pathogenic bacteria were detected positive and 120 samples were infestated by foodborne pathogens, the overall pollution rate was 10.70%, showing a trend of “rising linearly” . The contamination of Vibrio parahaemolyticus in raw aquatic products is serious, with a contamination rate of 17.59%. Listeria monocytogenes in meat and meat products is seriously polluted, and the contamination rate of Bacillus cereus in ready-to-eat rice products is high. Conclusion The prevalence of food-borne pathogens in Yantai region is relatively high, mainly due to pathogen contamination in aquatic products, meat and meat products and rice flour products. In particular, raw food aquatic products and instant rice noodles products, Vibrio parahaemolyticus and Bacillus cereus more serious infection. It is suggested to strengthen the prevention and control measures of food-borne pathogens in food production and sales and strengthen the monitoring of food-borne pathogenic bacteria to prevent the occurrence of food-borne diseases.
