目的了解福建省厦门市面制食品中铝污染的状况,为食品安全监管提供依据。方法 2006-2011年在厦门市超市/食品店、农贸市场、餐饮单位等居民主要购买点随机抽取5类面制食品,按GB/T5009.182-2003《面制食品中铝的测定》检测、按GB2760-2011《食品添加剂使用标准》进行评价。结果检测5类面制食品141份样品,超标率为43.3%;铝含量的最高检出值为882.00 mg/kg,均值为162.89 mg/kg,中位数(P50)为57.90 mg/kg;油炸类面制品和蒸制类面制品的铝含量和超标率均明显高于面条类面制品、焙烤食品和膨化食品。结论厦门市部分面制食品中存在铝污染,需要切实加强面制食品的监测与监管。
Objective To understand the status of aluminum contamination in flour products in Xiamen, Fujian Province, and to provide basis for food safety regulation. Methods From 2006 to 2011, five categories of non-staple food products were randomly selected from the main purchasing points of supermarkets / food stores, farmers’ markets and catering units in Xiamen City. According to GB / T5009.182-2003 Determination of Aluminum in Non-staple Food, According to GB2760-2011 “food additives use standards” for evaluation. Results 141 samples of five categories of noodle products were tested and the over standard rate was 43.3%. The highest detection limit of aluminum content was 882.00 mg / kg, with an average of 162.89 mg / kg and a median of 57.90 mg / kg. Oil The contents of aluminum and excessive contents of fried pasta and steamed pasta were significantly higher than those of pasta, bakery and puffed food. Conclusions Aluminum pollution exists in some of the pasta foods in Xiamen City. The monitoring and supervision of the pasta foods need to be strengthened.
