茶树是叶用作物,成品茶的质量,受茶园管理,采、制技术等制约外,起重大作用的是茶树品种。茶树品种的遗传特性,左右着茶叶化学成份的组成与含量,所以,从某种意义上说,品种的好环,实际上反映了茶叶中内含化学成份数量与组成上的差异。由于茶树品种内含物有相对的稳定性,因此研究茶树品种品质化学指标具有相当的可靠性。在茶树育种工作中,鉴定茶叶品质,历来都是应用直接鉴定法,即把鲜叶制成茶后,进行感官审评。此方法受评茶人员的经验和爱好等主观因素影响较大,很难判断品种的内
