1.3 酶1.3.1 什么是酶?酶的化学本质是什么?如何证明?酶是一类由活细胞产生的具有特殊催化能力的蛋白质。近年来发现某些核糖核酸也具有催化活性,因此目前更广义的定义为:酶是活细胞产生的具有催化能力的生物催化剂。酶的化学本质是蛋白质,有的是单纯蛋白质,仅由蛋白质组成,不含其他成分;有的是复合蛋白质,分子中除蛋白质外,还有非蛋白质成分。那么,怎样证明酶是蛋白质呢?(1)水解法:用酸、碱或蛋白酶将其水解,最终产物是氨基
