目的:了解学校食堂除餐饮具外,还有其它多种接触和盛放直接入口食品容器、用具的卫生状况,为加强学校食品卫生安全策略提供依据。方法:2004年4~11月,采用自编调查表,对学校食堂卫生状况查看和学校餐饮具及食品容器、用具消毒效果监测资料分析。结果:学校管理食堂和个人承包食堂的餐饮具、食品容器、用具的消毒合格率有明显差异,其中,学校管理食堂的餐饮具消毒质量明显好于个人承包食堂(X2=79.51,P<0.01);学校管理食堂的食品容器、用具消毒质量明显好于个人承包食堂(X2=9.75,P<0.01),由此可见,学校个人承包食堂管理松懈,设备简陋,功能不齐全,消毒不严格,忽视食堂内食品容器、用具的消毒和保洁。结论:不同管理方式学校食堂的餐饮具、食品容器、用具消毒质量存在一问题,尤其是食堂内盛放直接入口的食品容器、用具的消毒质量保洁措施不可忽视,应采取综合预防措施,杜绝学校食品隐患,确保学校食品卫生安全。
OBJECTIVE: To understand the hygiene conditions of food containers and utensils in direct contact with and in addition to food and beverage utensils in school canteens and to provide the basis for strengthening the school food hygiene and safety strategy. Methods: From April to November 2004, a self-made questionnaire was used to analyze the health status of school canteens and the monitoring data of food containers and food containers and utensils in schools. Results: There was a significant difference in passing rate of tableware, food containers and utensils in school management canteens and individual contractors’ canteens. Conclusion: There is a problem in the quality of disinfection of food utensils, food containers and utensils in school canteens with different management methods. In particular, the food containers with direct importation in the canteen should not be overlooked because of the disinfection quality of utensils.
