儿童患缺铁性贫血在世界各地比较普遍,是全球性的营养问题。人体铁的来源依靠食物的供给,一方面决定食物中含铁量是否丰富,更重要的是食物中铁是否容易吸收。从一九八二年全国营养调查北京地区资料表明:各类人群食物中铁的摄入量在十五点九至三十八点四毫克,与供给量标准相比是非常充裕的。分析铁的食物来源,其中植物性食物占铁摄入量的百分之八十八点四。但植物性食物铁的吸收率低。大米:百分之一;玉米、黑豆:百分之三,小麦:百分之五;
Iron deficiency anemia in children is common throughout the world and is a global nutritional problem. The source of human iron depends on the supply of food, on the one hand, determines whether the iron content in food is rich, more importantly, whether iron is easily absorbed in food. According to the data from the National Nutrition Survey in Beijing in 1982, the intake of iron in food for all kinds of people ranged from 15.9 to 38.4 mg, which is quite abundant compared with the standard of supply. Analysis of iron food sources, of which plant foods accounted for 88.4% of the iron intake. However, the absorption rate of plant food iron is low. Rice: one percent; corn, black beans: three percent, wheat: five percent;
