目的全面了解许昌市区面制食品中铝的污染情况,为食品卫生监督工作提供科学依据。方法对许昌市区面制食品中铝按改进的铬天青S比色法进行检测,并对检测结果进行统计分析,再依据国家标准《食品中污染物限量》(GB2762-2005)面制食品中铝≤100 mg/kg,进行判定。结果抽检的46份面制食品中铝的合格率为69.50%,其中油条的合格率仅为28.50%,镘头为62.50%,油条的最高检出量为1 100.80 mg/kg,超出标准11倍。结论本市面制食品中铝含量超标严重,为保证全市人民身体健康,有关部门应引起高度重视,进一步加大监管力度。
Objective To comprehensively understand the contamination of aluminum in flour in Xuchang urban area and provide a scientific basis for food hygiene supervision. Methods Chromium aluminum cyanuric S colorimetric method was used to test the aluminum in flour of Xuchang urban area. Statistical analysis was made on the test results. According to the national standard “Limit of Contaminants in Food” (GB2762-2005) Aluminum ≤ 100 mg / kg, to determine. Results The pass rate of aluminum in 46 samples of noodles was 69.50%. The pass rate of fried noodles was only 28.50% and the highest noodles was 62.50%. The highest detection rate of fried noodles was 1 100.80 mg / kg, 11 times higher than the standard . Conclusion In this city, the aluminum content in the noodle food exceeded the standard seriously. In order to ensure the health of the people in the city, the relevant departments should attach great importance to further strengthen the supervision.
