The water content of the grain varies greatly during development. For maize, water content in the early stage of development rapidly increased, and then gradually reduced to harvest. The initial increase in kernel volume is primarily related to rapid water uptake. Since water absorption is dependent on the grain water potential (Ψω) associated with the maternal water potential, the grain water potential is an important developmental factor. In plant vegetative organs, the expanded tissue has a lower water potential than the xylem. These differences in water potential form part of the growth process, providing water for cell expansion.
