在食品工业中经常需要测定蔗糖、葡萄糖、果糖和还原糖等糖类的含量。其测定方法可以用化学法、比色法、酶法、色谱法和同位素稀释法等,但因上述分析方法手续繁琐且费时,故工业生产中则经常采用最方便、快速的旋光法。旋光法测定糖类的原理主要是利用糖类是旋光性比较强的物质,当偏振光通过糖类溶液时,它能使偏振光的振动面产生旋转,其旋转角度与糖类溶液的体积百分浓度成正比,因此测定了偏振光的旋转角度,即可推算出糖类溶液的含量。
