1983年—1984年研究了茄门甜椒果实生长发育动态及果实发育过程中某些营养物质的积累和变化,结果表明:茄门甜椒果实于开花后10至26天为果实迅速生长发育期,26天至40天果实重量和体积增长缓慢,40天以后果实体积和重量几乎不再增加。甜椒果实中含有大量维生素 c,随着果实的发育,维生素 c 含量不断提高。红熟果维生素 c 含量比青果可高8—4倍。可溶性糖含量在果实发育过程中变化不大。蛋白质含量随着果实发育不断下降。
