不同干燥工艺对小麦苗中生物活性成分含量影响

对小麦苗用不同的方式进行干燥,探究不同干燥条件对其生物活性成分的影响,进而得出一种最佳的干燥工艺;用比色法测定总叶绿素、多糖、黄酮、多酚的含量;结果表明:微波功率在560W时,总叶绿素含量最高,为82.33mg /100g;烘箱干燥,温度为90°C时,多糖和多酚的含量最高,分别为19.87mg/g 和5.80mg/100g;黄酮在微波功率为420W时,含量最高,为5.29mg/100g;结论:最佳干燥条件为烘箱干燥温度90°C,微波干燥功率为420W.“,”Using different drying methods to handle the triticum aestivum L.and testing the bioactive components. Using colorimetric method to test the contents of total chlorophyll, polysaccharide, flavonoids and polyphenols. The result showed that the total chlorophyll contents were 82.33 mg/100 g when the microwave power was 560 W.In condition of oven drying when the temperature is 90℃, the polysaccharide and polyphenol reach the highest content, respectively 19.87 mg/g and 5.80 mg/100 g. Flavonoids reach the highest when the microwave power was 420 W, it content was 5.29 mg /100g. Conclusion: The optimum drying conditions were oven drying temperature of 90 °C and microwave drying power of 420 W.
