采用国际或国家标准分析方法 ,对 1999年山西省种植的或参加区试的 31个小麦品种 (系 )进行了品质测试 ,各性状的平均值为 :千粒重 36 0g ,容重 76 9 5g/L ,角质率 58 7% ,出粉率 6 1 0 % ,蛋白质含量 13 7% ,湿面筋 4 4 3% ,干面筋 14 5% ,沉降值 36 6ml。参照小麦品质分类标准 ,目前山西省种植的小麦品种的容重、出粉率、沉降值中等 ,蛋白质和面筋含量较高 ,但面筋质量较差 ,大多小麦品种属于中力小麦 ,个别品种达到强力小麦标准 ,无弱力小麦品种。
The quality of 31 wheat cultivars (lines) planted or participating in the district test in Shanxi Province in 1999 was tested using the international or national standard analytical methods. The average values of the traits were as follows: grain weight 36 0g, bulk density 76 9 5g / L, 587% of keratin, 6 1 0% of flour, 13 7% of protein, 443% of wet gluten, 14 5% of dry gluten and 366 ml of sedimentation. With reference to the wheat quality classification standard, the wheat varieties cultivated in Shanxi province have medium bulk density, flour yield and sedimentation value, high protein and gluten content, but poor gluten quality. Most wheat cultivars belong to moderate-intensity wheat and some varieties reach strong wheat Standard, no weak wheat varieties.
