1,3-甘油二酯(1,3-DAG)是天然油脂的微量成分,由一分子甘油和两分子脂肪酸组成,脂肪酸分别结合在甘油1位和3位的羟基端。国外研究表明,与日常食用油脂中的三酰甘油相比,1,3-DAG可抑制餐后血清三酰甘油水平的升高,减少脂肪在体内的积累[1-3]。国内对1,3-DAG的研究和应用起步较晚,目前尚未见系统的毒理学评价资料。该试验以国产1,3-DAG为受试物,依据食品安全性毒理学评价程序和
1,3-diglyceride (1,3-DAG) is a trace component of natural fats and oils. It consists of one molecule of glycerol and two fatty acids, and the fatty acids are respectively bonded to the hydroxyl end of 1st and 3rd glycerol. Foreign studies show that 1,3-DAG can inhibit the increase of postprandial serum triglyceride levels and reduce the accumulation of fat in the body compared with the daily consumption of triglycerides [1-3]. The domestic research and application of 1,3-DAG started relatively late, but no systematic toxicological evaluation data have been found yet. The test to domestic 1,3-DAG as the test substance, based on food safety toxicology evaluation program and
