[目的]了解肥城市餐饮业公用食(饮)具消毒效果。[方法]2008年8月对肥城市城区120家餐饮单位进行食(饮)具消毒效果进行调查,采用纸片法检测大肠菌群。[结果]调查不同类型餐饮单位120家,大、中、小型分别为25、55、40家,检测食(饮)具4210份,合格的2625份,合格率为62.35%。大型餐饮单位饮食(饮)具合格率(90.38%)高于中(67.42%)、小型餐饮单位(44.93%),差异有统计学意义(P<0.01);不同种类食(饮)具间差异无统计学意义(P>0.05),不同的存放时间、方法和不同消毒方法间的差异均有统计学意义(P<0.01)。[结论]肥城市餐饮单位食(饮)具消毒合格率较低,应加强卫生监督管理和检测力度,提高食(饮)具的消毒合格率。
[Objective] To understand the common food (drink) disinfection effect of Feicheng catering industry. [Method] In August 2008, 120 food and beverage units in Feicheng city were disinfected with food and drink, and the coliform bacteria was detected by the disk method. [Results] A total of 120 different types of catering units were investigated. Among them, 25,55 and 40 were large, medium and small, respectively. There were 4210 servings of food and drink, 2625 were qualified, and the pass rate was 62.35%. The rate of catering (drinking) with large catering units was higher than that with medium (67.42%) and small catering units (44.93%), with significant difference (P <0.01) There was no statistical significance (P> 0.05). There were significant differences between different storage methods, methods and different disinfection methods (P <0.01). [Conclusion] Feicheng catering unit food (drink) with a lower pass rate of disinfection should strengthen health supervision and management and testing efforts to improve food (drinking) with a disinfection pass rate.
