目的了解动车快餐盒饭蜡样芽孢杆菌污染情况,杜绝动车上由蜡样芽孢杆菌引起的食源性疾病的发生。方法对西安铁路局辖区内动车快餐盒饭随机采样,按现行有效标准进行蜡样芽孢杆菌检测。结果 2014—2015年共检测186份在售动车快餐盒饭,38份检出蜡样芽孢杆菌,总检出率为20.4%。2014和2015年蜡样芽孢杆菌检出率分别为22.5%和18.9%(P>0.05)。其中,2、3季度蜡样芽孢杆菌检出率高于1、4季度,检出率分别为25.0%、27.5%、9.1%、9.4%(P<0.05)。38份阳性样品中蜡样芽孢杆菌污染水平分布:29份阳性样品MPN值处于3~100 MPN/g,7份处于100~1 000 MPN/g,2份>1 000 MPN/g。结论西安铁路局辖区内动车快餐盒饭蜡样芽孢杆菌污染率较高,存在一定安全隐患,需要进一步加强监督监测管理工作,保证动车快餐盒饭食品安全。
OBJECTIVE To understand the pollution of Bacillus cereus in the fast food box car and eliminate the foodborne diseases caused by Bacillus cereus in the moving car. Methods Xi’an Railway Bureau area under the jurisdiction of fast food lunch box random sampling, according to the current valid standard Bacillus cereus. Results From 2014 to 2015, a total of 186 samples were detected for car food in a car and 38 samples for Bacillus cereus. The total detection rate was 20.4%. The detection rates of Bacillus cereus in 2014 and 2015 were 22.5% and 18.9%, respectively (P> 0.05). Among them, the detection rate of Bacillus cereus was higher than that of the first and third quarters in the second and third quarters, the detection rates were 25.0%, 27.5%, 9.1% and 9.4%, respectively (P <0.05). The distribution of contamination level of Bacillus cereus in 38 samples was positive. The MPN values of 29 positive samples ranged from 3 to 100 MPN / g, 7 to 100-1 000 MPN / g and 2 to> 1 000 MPN / g. Conclusions The contamination rate of Bacillus cereus in moving fast food lunch box in Xi’an Railway Bureau area is high, which poses a potential safety hazard. It is necessary to further strengthen the supervision, monitoring and management to ensure the safety of fast food and lunch box food.
