农业体系中塑造生物可利用的微量营养素输出最重要的因素是什么呢?一般来讲,比起贫瘠的土壤孕育出的食物,肥沃的土壤能够孕育出富含更多维生素和营养的食物(Welch,1998;Welch,2001)。土壤的营养状况、耕作体系、高密度营养价值作物(植物育种)的多样化选择(例如生物强化)、土壤改良、家畜和水产业是重要的因素,它们能够影响农业系统的产量(Tontisirin et al.,2002;Frison et al.,2006;Combs,Jr.and Welch,1998;Welch,2008;Allaway,1986)。总而言之,农业系统越多样化,食物系统就越会富含更多的微量营养素(肯尼迪Kennedy等人,2003;Tontisirin等人,2002)。
What are the most important factors shaping the production of bioavailable micronutrients in agricultural systems? In general, fertile soils can produce foods rich in more vitamins and nutrients than foods grown in barren soils (Welch , 1998; Welch, 2001). Diverse options (eg biofortification), soil remediation, livestock and aquaculture of soil nutritional status, tillage systems, high-density nutritive value crops (plant breeding) are important factors that can affect agricultural system yields (Tontisirin et al. ., 2002; Frison et al., 2006; Combs, Jr. and Welch, 1998; Welch, 2008; Allaway, 1986). All in all, the more diverse the agricultural system, the more enriched the food system is with micronutrients (Kennedy et al., 2003; Tontisirin et al., 2002).
