目的了解婺城区餐具消毒卫生质量,分析其影响因素,提出改进意见。方法用大肠菌群纸片法,按GB14934-94《食(饮)具消毒卫生标准》规定的检测方法进行检测。结果总体合格率为52%,不同年度、不同季度、不同消毒方法间合格率均有显著性差异。结论餐具消毒质量总体合格率偏低,应加强监管力度,加强对从业人员的技术培训,采取综合措施提高餐具消毒卫生质量。
Objective To understand the sanitary quality of tableware disinfection in Wucheng District, analyze its influential factors and put forward suggestions for improvement. Methods Coliform bacteria paper method, according to GB14934-94 “Food (drinking) with a disinfection health standards” test methods for testing. Results The overall pass rate was 52%, different years, different quarters, different methods of disinfection rates were significantly different. Conclusion Tableware disinfection quality overall pass rate is low, should strengthen supervision, strengthen the technical training of practitioners, to take comprehensive measures to improve the quality of tableware disinfection and health.
