沙河粉是岭南代表性的美食之一,一份上好的沙河粉,通常需要具备以下四个特点:一是要有较好的透明度,并且要薄得恰到好处;二是要有一定的柔韧度;三是成品的口感要好;四是要能闻到米香。我们这次在广州采访时,专门去了耀华集团旗下的沙河粉村考察,因此目睹了河粉的整个制作流程。这里,我从河粉的发展、制法,以及用河粉创新菜这三个方面来为读者朋友们做一次解析。
Shahe powder is one of the representative delicacies in Lingnan. A good Shahe powder usually needs to have the following four characteristics: First, to have better transparency, and to be thin just right; Second, to have a certain degree of flexibility ; Third is the taste of the finished product better; fourth is to smell the rice incense. When we interviewed in Guangzhou this time, we went to visit the Shahe Fen Village under Yaohua Group and we witnessed the entire production process of Fenghua. Here, I am from the development of phlegm, system of law, as well as innovative dishes with phoenix three aspects for the readers to do a friend analysis.
