“江南鲜笋趁鲥鱼,烂煮春风三月初。”这是“扬州八怪”之一郑板桥的咏笋名句。其实,古代不少文人墨客都有爱笋之好。传说,苏东坡在杭州做官期间,路过于潜县大片竹林,于是即兴赋诗:“可使食无肉,不可居无竹。无肉使人瘦,无竹使人俗。人瘦尚可肥,士俗不可救。”诗尚未成,于潜县令便以“笋焖肉”款待他。诗人吃得津津有味,食毕仍连连称赞,并情不自禁地提笔续诗:“若要不瘦且不俗,自当日日笋焖肉。”
