目的了解某品牌酱油对于其消费人群3-氯-1,2-丙二醇(3-MCPD)暴露水平的影响。方法采用国际上通用的检测方法 AOAC 2001.01测定哈尔滨市该品牌6种酱油的3-MCPD含量;2010—2011年以问卷调查的方式在哈尔滨市郊区某农合社区调查18~60岁社区居民1 352人,了解居民关于3-MCPD相关食品的膳食习惯以及该品牌酱油摄入的一般状况,筛选出经常食用该品牌酱油的居民,以酱油中3-MCPD的检测结果为依据计算居民食用酱油的3-MCPD暴露量。结果该社区存在经常食用该品牌酱油人群,被调查的1 352人,其中497人经常食用该品牌1种酱油,食用年限均在4年以上,居民对于酱油的3-MCPD摄入量范围为0.648~34.361μg/(kg bw.d)。结论该社区某品牌酱油的消费人群可能存在3-MCPD的高暴露风险。 Objective To understand the effect of a certain brand of soy sauce on the level of 3-chloro-1,2-propanediol (3-MCPD) exposure in its consumer population. Methods The international common detection method AOAC 2001.01 was used to determine the content of 3-MCPD in 6 kinds of soy sauce of this brand in Harbin. 2010-2011, a questionnaire was used to survey the residents of 18 ~ 60 years old in a rural cooperative community in Harbin. People to understand the residents about the dietary habits of 3-MCPD-related foods and the general situation of the brand of soy sauce intake, filtered out the residents often eat the brand of soy sauce, soy sauce 3-MCPD test results based on the calculation of household consumption of soy sauce 3 -MCPD exposure. Results There were 1 352 people in the community who regularly consumed this brand of soy sauce. Among them, 497 people regularly consumed one soy sauce of the brand, with an annual consumption of more than 4 years. The residents’ intake of soy sauce for 3-MCPD ranged from 0.648 ~ 34.361 μg / (kg bw.d). Conclusion There is a high risk of exposure to 3-MCPD to the consumer population of a brand soy sauce in this community.
