食品安全问题一直是人类关注的焦点问题,随着科学和生产力的进步,食物短缺已不再是威胁大多数人生存和健康的主要问题。但食品中存在的威胁人体健康的因素却日益突出,成为食品安全的最主要问题。食品中的有害因素可以是食品的本身成分,也可以是外来物质,但主要是外来物质,环境污染是食品中重要的外来物质来源。环境污染主要指工农业生产中产生的“三废”即废气、废水、废物的污染和生活垃圾的污染,通过对土壤、水源的污染而造成食品的污染。
