论文部分内容阅读
对云南省35份茶树良种的主要生化成分(茶多酚、氨基酸、水浸出物、可溶性糖、咖啡碱、儿茶素等)的含量进行测定,并以获得的测定结果为基础,进行了主成分分析和聚类分析.结果表明:主成分分析得到4个主成分,且4个主成分的累计贡献率达到了83.77%;通过聚类分析,可将35个茶树良种分为A、B两个类群,A、B两个类群除氨基酸含量、酚氨比、EGC含有率和儿茶素指数之间存在显著性差异外,其余生化成分含量或含有率均相对一致.氨基酸含量大于2.0%的资源都聚类在A类群中,结合云南茶树资源的生化特点,认为A类群中的大部分为红、绿茶兼制的品种,B类群为适制红茶的品种.
The content of main biochemical components (tea polyphenols, amino acids, water extract, soluble sugar, caffeine, catechin, etc.) of 35 elite tea varieties in Yunnan Province were determined.
