目的探讨了解晋江市餐饮行业餐(饮)具的消毒效果及其影响因素,为卫生行政监管提供科学依据。方法依据GB14934-94《食(饮)具消毒卫生标准》,采用大肠菌群快速纸片法进行采样和检测。结果 2010-2012年共检测餐具27 244份,合格24 582份,总体合格率为90.2%。结论晋江市餐饮业所使用的餐饮具卫生状况较好,检测合格率呈逐年上升趋势。
Objective To explore the disinfectant effect and its influencing factors of meal (drink) in Jinjiang City catering industry and provide scientific basis for health administrative supervision. Methods According to GB14934-94 “food (drinking) with a disinfection health standards”, using coliform bacteria fast paper method for sampling and testing. Results From 2010 to 2012, a total of 27 244 tableware were tested, of which 24 582 were accepted. The overall pass rate was 90.2%. Conclusions The sanitary wares used in the catering industry in Jinjiang City are in a good condition with the passing rate of testing increasing year by year.
