餐饮服务机构作为餐饮废弃物的排放者,其以餐饮服务经营者的理性决策为指导的餐饮废弃物排放行为决定了餐饮废弃物的流向。文章通过模拟天津市某餐饮服务机构经营者的餐饮废弃物排放行为决策过程,对天津市餐饮服务机构面临的五种餐饮废弃物排放行为选择进行成本效益分析,结果表明以付费购买为收集方式的非法餐饮废弃物收集活动是规范化餐饮废弃物收运活动遭遇的最主要障碍。非法餐饮废弃物收运处置活动极易引发环境污染、“泔水猪”、“地沟油”等问题,加快推进天津市餐饮废弃物的规范化处置刻不容缓。
Catering service agencies as the discharge of food waste, its food service operators to guide the rational decision-making of food waste emissions behavior determines the flow of food waste. The results show that the payment-based collection Illegal catering waste collection activities is the most important obstacle to the standardization of catering waste collection and transportation activities encountered. Illegal catering waste collection and disposal activities can easily lead to environmental pollution, “pigs”, “waste oil” and other issues, to speed up the standardization of food waste disposal in Tianjin without delay.
