本文通过整理研究全国肉类制品及水产品食源性致病菌污染状况的调查文献,发现全国各地区食源性致病菌的污染具有一定规律性:沿海省市以可食用水产品被副溶血弧菌污染为主,内陆省市以肉类制品被沙门氏菌和单增李斯特氏菌污染为主。这为全国食源性致病菌主动监测工作网络的建立及维护提供一些数据支持。
