脑血管病人忌吃鹌鹑蛋据营养学家测定,各种食品中,鹌鹑蛋含胆固醇的比例最高。每百克鹌鹑蛋内就含有3640毫克胆固醇,而豆制品,鸡蛋清和海参每百克胆固醇含量均为零。其他食品,如牛奶为13毫克,瘦猪肉为90毫克,鸡蛋黄为1163毫克。也就是说,鹌鹑蛋的胆固醇含量是牛奶的280倍,瘦猪肉的61倍,鸡蛋黄的3.1倍。人体内胆固醇升高,是引起动脉硬化的主要原因。因此,老年人,尤其是患有脑血管疾病的人,以少食鹌鹑蛋为好。
