流行病学和实验研究表明,番茄红素具有抗癌和抗动脉粥样硬化作用,推测与其抗氧化特性有关。本文从番茄红素的特性、抗氧化能力、抑制脂质氧化损伤等方面进行综述,为今后更好地开发利用番茄红素提供理论依据。
Epidemiological and experimental studies have shown that lycopene has anti-cancer and anti-atherosclerotic effects, presumably with its antioxidant properties. This review summarizes the properties of lycopene, antioxidant capacity and inhibition of oxidative damage of lipid so as to provide a theoretical basis for further development and utilization of lycopene in the future.
