缺钼的酸性黄棕壤上施用钼肥能增加小麦全生育期植株的含钼量,大幅度提高冬小麦产量。施钼影响小麦品质,使小麦面粉的含钼量提高到0.2mg/kg以上,达到食用标准。施钼影响了小麦面粉的氨基酸组成,使不同类型的蛋白质含量发生变化。含脂肪侧链的丙氨酸、异亮氨酸和亮氨酸的比例因钼的施用而升高,但含硫的胱氨酸和蛋氨酸的比例则有所下降。施钼增加了小麦面粉的大分子蛋白质含量,减少了小分子蛋白质含量。
