(1)什么是糙米?稻谷脱去稻壳后的果实便是糙米。糙米由皮层、胚乳和胚三部分组成。胚乳占糙米的绝大部分,胚所在的一侧称为糙米的腹部,胚的对面一侧称为糙米的背部。胚位于腹部下端,胚与胚乳连接不很紧密,在碾米时容易脱落,胚乳和胚都被皮层紧密地包裹着。糙米的皮层包括果皮、种皮、珠心层(又称外胚乳)和糊粉层,这四部分总称为皮层。果皮和种皮称为外糠层,珠心层和糊粉层称为内糠层。在碾米时,被碾下的糠层被称为米糠,糙米去皮后则称为大米。

Peel and seed coat called the outer layer of bran, bead layer and aleurone layer called the bran layer. During rice milling, the layer of rice bran that is milled is called rice bran, and the brown rice is peeled and then called rice.
