近年来,食品安全已成为全球性的重大战略性问题,并越来越受到世界各国政府和消费者的高度重视。为此,美国、日本、欧盟等通过调整和修订政策法规,将食品安全列入优先领域,纷纷增加科技投入等措施,强化技术研发,保障食品安全。然而,我国长期存在的食品科技瓶颈,已成为影响食品安全的重要因素。因此,要提升我国食品安全水平必须打破制约食品安全的科技瓶颈,构筑“从农田到餐桌”的安全屏障,实现食品安全保障从“被动应付型”向“主动保障型”的转变。
