苦累是河北省的一道特色小吃,介于主食和菜之间。旧时穷人家买不起菜,主食又不够吃,就常用槐花、榆钱、扫帚菜、红薯叶和棒子面拌在一起蒸熟,出锅后趁热拌上调料,就可以既当菜又当主食。起名为苦累就是为了说明这是一道忆苦饭。现在生活越过越好,吃苦累的人已经不多了,多数人吃苦累是为了调剂胃口,润燥、清肠胃。今天我们就来学习用豆角来蒸苦累。将豆角洗净后,切成约一厘米长的小段。(当然,长度不是主要的,最重要的是不要切到手!)洒入适量的盐先腌一会儿。
