铁是人体内含量最多的微量元素,广泛参与机体内的多种生理生化过程,是微量元素中最容易缺乏的一种,缺铁可引起缺铁性贫血,被WHO、UNICEF确定为世界性营养缺乏病之一,也是我国主要的公共营养问题。通过分析铁的生理功能、缺乏原因以及缺乏病的临床表现,探寻本病行之有效的膳食预防和治疗方法。
