目的:了解随州市食品中致病菌的污染现状,确定污染来源,掌握和分析我市食品安全状况,及时发现食品安全隐患,为食品风险做好预警。方法:依据GB/T4789-2008和GB/T4789-2010检测标准和国家食源性致病菌监测工作手册,对2009年-2011年在全市采集的10类食品进行沙门菌、单增李斯特菌、金黄色葡萄球菌、副溶血性弧菌、EHEC O157:H7五种致病菌的检测。结果:检测的424份样品中,致病菌的总检出率为8.96%(38/424),其中金黄色葡萄球菌检出率最高5.73%(20/349),单增李斯特菌检出率3.22%(11/342),副溶血弧菌检出率3.03%(1/33);EHEC O157:H7检出率0.94%(2/212);沙门菌检出率0.94%(4/424);未检出空肠弯曲菌。10类食品中致病菌阳性检出率最高的为速冻米面食品占14.55%,其次为生畜(禽)肉占14.29%,凉拌菜占13.04%,豆制品占11.43%等。结论:随州市居民主要消费食品存在食源性致病菌污染,其中速冻米面、生禽(畜)肉、凉拌菜、豆制品等是主要受污染的食品品种。金黄色葡萄球菌、单增李斯特菌是随州市食源性疾病发生的危险因素。
OBJECTIVE: To understand the status quo of contamination of pathogenic bacteria in food in Suizhou, determine the sources of pollution, master and analyze the food safety status in our city, discover hidden dangers of food safety in time, and make early warning of food risks. Methods: According to the testing standards of GB / T4789-2008 and GB / T4789-2010 and the national food-borne pathogen monitoring manuals, 10 kinds of food collected in the city from 2009 to 2011 were tested for Salmonella, Listeria monocytogenes , Staphylococcus aureus, Vibrio parahaemolyticus, EHEC O157: H7 five kinds of pathogenic bacteria detection. Results: Among the 424 samples tested, the total detection rate of pathogenic bacteria was 8.96% (38/424), the highest detection rate of S. aureus was 5.73% (20/349), the detection rate of Listeria monocytogenes The detection rate of Salmonella was 0.94% (2/212), the detection rate of Salmonella was 0.94% (4/424), the positive rate was 3.22% (11/342) and the rate of Vibrio parahaemolyticus was 3.03% (1/33) ); Campylobacter jejuni was not detected. The highest positive rates of pathogenic bacteria in the 10 categories of foods were quick frozen rice noodles (14.55%), followed by live meat (14.29%), cold salad (13.04%) and soy products (11.43%). CONCLUSIONS: There are food-borne pathogenic bacteria in the main consumer food in Suizhou. Among them, frozen rice noodles, raw poultry (meat), cold dishes, soy products and so on are the main contaminated food varieties. Staphylococcus aureus, Listeria monocytogenes is a risk factor for foodborne disease in Suizhou.
