目的了解大连市食品中食源性致病菌的污染状况,为食源性疾病的监测和预警提供科学依据。方法按照《全国食源性致病菌监测工作手册》的要求,对大连市区农贸市场、大型超市、宾馆酒店及个体摊贩销售点的10类食品进行沙门菌、单核细胞增生李斯特菌、致泻大肠埃希氏菌、志贺菌、金黄色葡萄球菌、副溶血性弧菌和蜡样芽孢杆菌7种食源性致病菌的监测分析。结果 10类共290份样品检出致病菌10株,总检出率为3.45%。其中致泻大肠埃希氏菌5株,金黄色葡萄球菌2株,副溶血性弧菌1株,蜡样芽胞杆菌1株,单核细胞增生李斯特菌1株。结论大连市市售食品受到不同程度的多种食源性致病菌的污染,熟肉制品和流动早餐为主要受污染食品,应加强市售食品监督管理,减少由此引起的食源性疾病的发生。
Objective To understand the status of food-borne pathogens in food in Dalian and to provide a scientific basis for the monitoring and early warning of food-borne diseases. Methods According to the requirements of the National Foodborne Pathogenic Bacteria Monitoring Manual, Salmonella, Listeria monocytogenes, Listeria monocytogenes and so on were tested on 10 kinds of foodstuffs in the markets of farmers’ markets, large supermarkets, hotels and individual vendors in Dalian. Diarrhea Escherichia coli, Shigella, Staphylococcus aureus, Vibrio parahaemolyticus and Bacillus cereus 7 kinds of foodborne pathogens monitoring analysis. Results A total of 10 out of 290 samples were detected pathogenic bacteria 10 strains, the total detection rate was 3.45%. Including 5 strains of diarrhea Escherichia coli, Staphylococcus aureus 2, Vibrio parahaemolyticus 1, Bacillus cereus 1, Listeria monocytogenes 1 strain. Conclusion Commercial food in Dalian is polluted by many kinds of food-borne pathogenic bacteria in different degrees. Cooked meat products and mobile breakfast are the main contaminated food. Food safety supervision and management should be strengthened to reduce the food-borne diseases happened.
